I have been making this carrot cake for years and always get requests to bake it. I don't remember the recipe I originally followed because I took the nuts and sultanas out. I now follow a recipe I put together a few years ago (scroll down). The only difference now is that I used a food processor to grate the carrots, its so much quicker to do and hurts your hands less.
