Enchiladas -
Usually I am lazy and just use a packed but as I have time (couldn't get hold of one in Tescos) I decided to make my own sauce.
I had managed to get some corn wraps to make them as they have a different texture to the other wraps. I fried pork with smoked paprika, onions and garlic. I added sweetcorn and spinach once the meat was cooked. For the sauce I mixed passata, chilli flakes, mixed herbs and smoked paprika. I added some grated cheese to the sauce before mixing a 1/3 of the sauce to the frying pan with the meat in it. I then put them in 4 wraps, covered the wraps in sauce then layered another 4 wraps on top with another layer of sauce, grated cheese. Put it in the oven a little while for the cheese to melt then serve.
