Roast - Easter Sunday
I had 3 chicken breasts, I sliced them added some grated cheese and covered 2 in a rasher of bacon. The 3rd breast I covered in green pesto, this would be left over for lunch the next day. I had some small potatoes left, cut them into smaller pieces, a small red onion, garlic , some mixed herbs and oil mixed together in dish. I cooked the potatoes and chicken at the same time. Found some stuffing in the cupboard, made them into balls, There is enough stuffing to have chicken & stuffing sandwich's for lunch the next day (yum, feels like Christmas). Broccoli, mixed veg and green beans on the side.
