As we have been in a another lockdown, it has been a great time to learn to cook new things at home. As I have been getting more fish in my diet I thought a good time to start with making my own fishcakes.
A lot of recipes included using tinned salmon but I wanted to try with fresh salmon so found this recipe on Waitrose - https://www.waitrose.com/home/recipes/recipe_directory/e/easy-salmon-fishcakes.html
I found some some lemon bread crumbs which were perfect for this, and will use them again. The only issue I had with this recipe was that there was a lot of potato in it and needed more fish. I would like to make them again with more fish. I made my own sweet potato chips in the deep fat fryer, I hadn’t done this before but honestly tasted so much better just cutting the potatoes was hard but totally worth the hassle.
