
I decided to try making Keto brownies as some colleagues of mine had been doing the Keto diet and I had recently started working with the Paedatric Epilepsy team.
Keto diet has limited carbs & no sugar and is high fat, lots of cream and protein. Baking with different ingredients I had no idea how these would turn out. I looked for the least complicated recipe online and found this one - https://www.ditchthecarbs.com/nut-free-keto-brownie/
I actually decided to adapt the recipe and used these measurements instead:
100g Full Fat cream/soft cheese
4 eggs
1/4 Tub of Green&Blacks cocoa powder
100g bar of Valor Sugar Free Chocolate
Butter
4 Tsp - natural sweetener
No vanilla

The texture is slightly different from normal brownies, a bit more sponge like. Tastes very rich and you only want small pieces - bite sized. Everyone loved them in the office!
