I have wanted to make an Indian curry in forever but the first time I made one it went completely wrong. This time I decided to do some research first to see how to make the sauce nice and thick.

I decided to make the base myself but would still use the jar of paste for the chicken (was feeling a bit lazy). Trying to work my way up to the harder stuff.
Chunky vegetables to start as I was going to blender them so it didn’t matter on the size.
Base :
1 red onion
3 carrots
1 1/2 courgettes
Half a red pepper
4 cloves garlic
Ginger
1 tsp Turmeric
1 tsp Cumin
1 tsp Corridar powder
Water
This was the moment I realised I need to invest in a hand blender for sauces.
I used chicken thighs, half a jar of paste then a tin of chopped tomatoes.
Half the base added. Should of maybe blended it more but I was getting hungry.
Successfu!!! so happy I finally made an Indian curry that tasted amazing. I will definitely be making another base again and try out another curry. I really enjoy Kormas and coconut based curries, but my son prefers tomato based so thats why we ended up going with Madras this time.
