
This is a fantastic recipe, its from the Dishoom book. Highly recommend purchasing as there is some amazing recipes.

The first time I tried the Ruby Curry was when we had it for Easter and cooked by my boyfriends brother & friend. Its took them hours but is totally worth it. The only issue is that it doesn’t make a lot and only for 4 people.

Easter this year my boyfriend & I decided it was the perfect opportunity to try making it ourselves. Over the past year my boyfriend has been learning to cook and really getting into it. After years of watching his family make food, he has started being creative with it too.

We went to out local Taj as we thought that was the best place to get all the ingredients but did struggle with a couple of things. The most important was the chill’s and had to find an alternative.
We ended up using Kashmiri chilli powder instead and could only get green cardamom pods. There was also trouble getting fresh dill.
We started off by marinating the chicken over night. We knew making this curry from scratch would be a challenge.

The only thing with the sauce for this curry there isn’t at lot because its for 4 people. Its lovely and rich and you always want more.
It takes a while, have to time everything right and get the chicken in to grill/cook while making the sauce.

The chicken as a dish on its own without the sauce is delicious. It is better to grill the chicken, we had rather small pieces and would definitely be great as bigger bits on a bbq.
