
I absolutely love Thai green curry and have wanted to make it for ages! It is a favourite of my mums to so decided to make it for us with the pastes I got recently.

- red peppers
- baby sweet corn
- green beans

I was going to add bamboo shoots to this one but completely forgot. Lots of chicken too but next time I will cut the chicken pieces smaller. I expected it to be more green and not sure why it came out so pale, maybe there wasn’t enough coriander in it?
Thai Green Curry with aubergine

I came across a recipe in Rosa’s Thai Cafe cookbook that mentioned Thai aubergines I wasn’t really sure what they were but decided to take on that inspiration. I really enjoy aubergines so I wanted to make this for myself.

I went with prawns this time as I was just making it for myself and remembered the bamboo shoots. I didn’t follow the whole
recipe just used it more for a direction.
