

I decided to make some cute red velvet cupcakes for Valentines day 2019. I had never made them before, was excited to try something new.

This was the first time I had baked with buttermilk before, it made a lot more cakes than I expected it to make. As raspberry and white chocolate is one of my favourite flavour combinations I decided to add white chocolate chips to the mix. The cakes came out super red also which is what you want some a red velvet cake.

This was my first attempt at using a pipping bag to ice cupcakes, I don't know why I never tried to ice them like this before because it was so much easier to do.
I used a simple pipping technique as I wasn't sure how they would come out at first, the icing was the correct thickness to be able to do this and they came out better than I thought they would.
I add some dried raspberry pieces on top to go with the red cake as it was valentines day. They turned out really pretty, I was so pleased with them. As I had so many cakes I took them to work and shared them with everyone.
